MY MOTHERS ZUCCHINI BREAD


My Mothers Zucchini Bread

Ingredients
2/3 c. oil

2 eggs

2/3 c. white sugar

2/3 c. brown sugar

1 1/3 c. grated raw zucchini

1 1/2 tsp. Vanilla

2 c. flour

1/2 tsp. salt

1/2 tsp. baking soda

1/4 tsp. baking powder

1 1/2 tsp. cinnamon

2/3 c. chopped pecans

Directions:
Mix together ingredients above from flour on down.
Beat eggs until foamy.
Add sugar, oil, zucchini and vanilla.
Mix lightly, but well.
Add dry ingredients to liquid mix, stir well then add nuts.
Bake at 350 for about one hour.

BEST BANANA BREAD


Best Banana Bread

Ingredients:
1 ½ c melted butter
1 ¾ c. brown sugar
4 eggs
2 ½ tsp. vanilla extract & 2 tsp. almond extract
1 tsp. salt
½ tsp. baking soda
4 c. flour
3 tsp. baking powder
½ tsp. nutmeg
2 tsp. ground cinnamon
grated rind from one orange
2 c. mashed ripe bananas soaked in 1 c. strong black coffee
1 c. raisins and chopped nuts

Directions:
In a bowl, mix together the mashed bananas and coffee. In a separate bowl, mix the butter and sugar. Then add the eggs one at a time. Then add in the vanilla, almond extract, salt and baking soda. In a separate bowl, mix together the flour, baking powder, nutmeg, cinnamon, and orange rind. Then add flour mixture and banana mixture (including all the coffee) alternately to butter mixture. Mix gently. Then add nuts and raisins. Grease two loaf pans. Bake at 350 degrees for 40-50 minutes.

STRAWBERRIES 'N' CREAM BREAD


Strawberries ‘N’ Cream Bread

Ingredients:
½ c. butter softened
¾ c. granulated sugar
2 eggs
½ c. sour cream
1 tsp. vanilla extract
¾ c. all purpose flour
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
¼ tsp. ground cinnamon
¾ c.  chopped fresh strawberries

Directions:
In a mixing bowl, cream butter and sugar until fluffy. Beat in eggs, one at a time. Add sour cream and vanilla: mix well. Combine the flour, baking powder, baking soda, salt and cinnamon; stir into creamed mixture just until moistened. Fold in strawberries. Pour into a greased 8 x 4 x 2 in. loaf pan. Bake at 350 for 65 min or until a toothpick inserted near the center comes out clean.
Cool  for 10 min. remove from pan to a wire rack to cool completely.

CHOCOLATE KAHLUA TRIFLE


Chocolate Kahlua Trifle

Ingredients:
1 chocolate cake prepare according to the directions
2 sm. Boxes chocolate instant pudding mix
3 c. milk
1 lg. tub of cool whip
¼ c Kahlua

Directions:
Bake cake according to boxed directions
Mix pudding using 3 c. of milk to 2 sm. Boxes of chocolate pudding mix. Cut cool cake into small squares, layer cake in bottom of trifle bowl, drizzle ½ of the Kahlua over cake pieces. Layer ½ of the pudding on top of cake, layer ½ of the cool whip over pudding. Repeat chill and serve.

BAKED CHEESE BLINTZ


Baked Cheese Blintz

Ingredients:
4 oz. cream cheese
8 oz. cottage cheese
1 egg yolk
1 tbs. sugar
¾ tsp. vanilla
Blend together and set aside

3 eggs
¾ c. sour cream
¼ c. milk
¼ c. melted butter
1 tsp. lemon peel
¼ c. granulated sugar
½ c. flour
1 tsp. baking powder

Directions:
Blend and pour ½  of batter into greased 9x9 pan. Drop cream cheese mixture around & pour remaining batter over. Bake at 350 for 45 min.
